  • 1/2 teaspoon black pepper
  • 3 eggs
  • 4 cups Cheez-It crackers
  • 3 pounds drumettes and wings
  • 1 tablespoon unsalted butter
  • 2/3 cup milk
  • 3 cups sharp cheddar, shredded
  • 1 can (4 oz) diced mild green chiles

Step 1

In a bowl, combine 2/3 cup all-purpose flour, 1 tsp salt and black pepper. In a second bowl, beat eggs. In a food processor, pulse Cheez-It crackers and 1/4 tsp salt until it reaches the texture of bread crumbs; place in a third bowl. Dredge drumettes and wings in flour, followed by eggs, then cracker crumbs. Place on a baking sheet fitted with a wire rack and bake at 400 degrees for 45 to 55 minutes. Meanwhile, melt unsalted butter in a small saucepan. Stir in 1 tbsp all-purpose flour; cook 1 minute. Whisk in milk; bring to a simmer and cook 3 minutes, until thickened. Stir in shredded sharp cheddar until melted. Stir in diced mild green chiles and 1/8 tsp salt until combined. Serve alongside wings.
