Ingredients

  • 1 bunch asperagus spears, cut in 1/2" pieces
  • 4 eggs, whisked
  • prepared pie crust
  • 3 tbs butter
  • 1/2 onion chopped
  • pinch cayanne pepper
  • 1 tbs minced garlic
  • salt and pepper
  • 1/4 cup chopped chives
  • 2 tbs dijon mustard
  • 1 cup heavy cream
  • salt and pepper
  • dash cayanne pepper
  • 1 tsp nutmeg
  • 1 1/2 cup sharp cheddar cheese, shredded

Preparation

Step 1

bake prepared pie crust in 425 degree oven 6 to 8 minutes. Poke holes in bottom of crust before baking.
Saute onion in butter until tender, add asperagus, cayanne pepper , garlic and salt and pepper, cook till tender.

Mix eggs, chives, mustard, cream,salt pepper, cayanne and nutmeg, whisk together.

In cooled crust put veges, pour egg mixture on top then top with cheese.

Bake 325 degrees for 35 minutes.
