Ingredients

  • 1 large onion
  • 2 eggs
  • 1/2 cup panko bread crumbs
  • 1 Tbsp Cajun seasoning
  • 1/4 tsp salt
  • 1/2 cup Greek yogurt
  • 2 Tbsp ketchup
  • 2 tsp horseradish sauce
  • 1/4 tsp oregano
  • 1/4 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp salt

Step 1

Preheat oven to 400 °F.
Cut 1/4 inch off the top of the onion.
Peel top layer of skin, but leave the root.
Without cutting all the way through, make even slices outward from the root until you have 16 equal sections.
Place in a bowl of water to soak.
In a separate bowl, whisk two eggs until evenly mixed.
In a third bowl, combine bread crumbs, Cajun seasoning, and 1/4 tsp. of salt. Mix thoroughly.
Place soaked onion on baking sheet. Drizzle evenly with whisked egg, then with bread crumb mixture.
Bake for 10 minutes.
While baking, combine remaining ingredients in clean bowl. Mix thoroughly.
Serve onion hot, with dipping sauce on the side.
