  • 8 cups vegetable oil
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon plus 1/4 tsp salt
  • 3 pounds drumettes and wings
  • 4 tablespoons unsalted butter
  • 1/3 cup harissa
  • 1/3 cup honey, plus more for drizzling
  • 1 tablespoon lemon juice

Step 1

In a large, heavy-bottomed pot, heat vegetable oil to 375 degrees . In a bowl, combine all-purpose flour with 1/4 tsp salt, then toss with drumettes and wings. In a small pot, melt unsalted butter over medium heat. Stir in harissa, honey, lemon juice and 1/4 tsp salt. Stir until warm, cover and set aside. Fry wings in 2 to 3 batches for 10 to 15 minutes each, until golden brown, making sure temperature stays close to 375 degrees . (Keep first two batches warm in a 200 degrees oven.) In a clean bowl, toss wings with sauce. Transfer to a platter and drizzle with more honey.
