Baked Goat Cheese with Caramelized Onion, Garlic and Figs

Ingredients
- 2 pounds goat cheese
- 14 dried figs, sliced
- 1/4 cup dry sherry
- 2 large onions, thinly sliced
- 10 garlic cloves, minced. can use frozen minced ones from Trader Joe's
- 3 rosemary sprigs
- 2 tsp salt
- Fresly ground pepper to taste
- 2 sliced baguettes

Step 1
Preheat oven to 350 degrees.
Crumble goat cheese into an oven safe dish.
In a sauce pot combine the figs and sherry with enough water to barely cover the figs. Put on high heat and bring to boil, cover and remove and let figs plump.
Pour the EVOO into a large skillet and place over medium heat. Add the onions, garlic, rosemary, salt and pepper and cook for 10 minutes. They should be totally carmalized for max flavor. Remove figs from sauce and add to the onion mixture. Stir and combine. . . pour over cheese, put on top shoft in oven and bake for 20 minutes or til bubbly.
Serve with bread or crackers.
