Ingredients
- 8 oz ground sirloin
- 8 oz ground chuck
- 1/2 tsp kosher
- ground pepper
- 3 tbsp oil
- 2 med onions, sliced
- 2-3 tbsp unsalted butter
- 8 slices rye bread
- 8 slices Swiss or American cheese

Preparation
Step 1
Break both meats into small pieces on large waxed paper. Sprinkle 1/2 tsp salt and pepper on meat. Bring meat together by hand, avoiding kneading it and don't worry if it seems loosely knit. Divide into 4 portions, then into balls by gently tossing from hand to hand; finally press each one an oval patty slightly larger than bread slices,
Heat 1 tbsp oil in skillet over med heat. Add onions, season and cook until golden, about 7 min. Put in bowl. Wipe out skillet and add another tbsp oil. Cook patties until well browned-about 3 min per side.
Butter each bread slice. Lay bread, butter side down on counter, Divide onions evenly among sandwiches and top with slice of cheese, a patty, another slice of cheese and another piece of bread. Heat skillet over med heat. Cook sandwiches.
