Ingredients

  • 2 lbs assorted root vegetables such as potatoes, sweet potatoes, turnips and parsnips,
  • 2 cloves garlic, peeled and minced,
  • 1/2 ActiFry spoon each chili powder, ground coriander seeds and ground cumin,
  • 3 ActiFry spoons olive oil,
  • 2 ActiFry spoons fresh coriander leaves, finely chopped,
  • Salt and pepper (optional)

Preparation

Step 1

Peel the vegetables and cut into 1/2-inch cubes. Wash well with water and then dry with absorbent paper.

Put the vegetables in a bowl. Mix the chili powder, cumin and coriander with 2 ActiFry spoons of olive oil. Add to the vegetables and mix until well coated. Transfer to the ActiFry pan. Drizzle in the remaining oil.

Cook for 30 minutes, or until the vegetables are tender and brown. Season to taste with salt and pepper, if needed. Decorate with the chopped coriander leaves if you want to.
