Ingredients

  • 4 soft French or Cuban rolls (split, 6-inches)
  • 1 cup Dijon mustard
  • 1 recipe Mario's Arista Toscana (thinly sliced)
  • 1/2 pound mortadella (thinly sliced)
  • 8 hot and sweet pickles (thinly sliced lengthwise)
  • reserved roasted and sliced fennel and onion (from the Arista Toscana)
  • 1/2 pound Swiss cheese (sliced)
  • 1 stick butter (softened)

Preparation

Step 1

Preheat Panini press to medium heat.
On a clean work surface, open a roll. On both sides of the roll, spread some Dijon mustard. Top bottom roll with a few slices of roast pork, mortadella, pickles and cheese. Top with remaining half of roll. Spread some softened butter on the top and bottom of the roll. Continue building sandwiches with remaining ingredients.
Place on the Panini press and close. Griddle until golden-brown on the outside and the cheese is melted on the inside. Cut in half and serve!
Helpful Tips:
- Make Mario's Arista Toscana for dinner and make the Cubano sandwich as a fantastic leftover!
- For a short cut, use store-bought porchetta or roast pork as a substitute for the Arista Toscana.
