Ingredients
- 1 medium zucchini
- 1 cup fresh mushrooms
- 1 medium eggplant
- 1 red pepper
- 1 green pepper
- 2 ActiFry spoons garlic cloves
- Parsley
- 2 ActiFry spoons virgin olive oil
- 1/2 cup dry white wine
- Salt and pepper

Preparation
Step 1
Wash the vegetables. Chop the zucchini and the eggplant ( unpeeled ) in slices, salt and pepper and leave for approximately 15 minutes to sweat. Then dice. Clean the mushrooms, slice thinly and cut in half. Cut the peppers in thin strips.
Place the eggplant, zucchini, peppers and mushrooms in ActiFry. Pour in the oil and cook for 5 minutes.
Crush the garlic with the parsley. Add to the ActiFry with the white wine. Season. Cook for 10 more minutes.
Serve as a starter.
