Ingredients

  • Part A:
  • 3 cups cooked rice
  • 1 cup milk
  • 2 eggs beaten
  • 1/4 cup grated parmesan cheese
  • 2 tbsp green onions
  • Part B:
  • 1/2 cup green peppers, sliced
  • 2 cups mushrooms, sliced
  • 2 tbsp margarine
  • 1 lb cooked shrimp
  • 1/4 cup dry white wine
  • 1 pkg. (250g) Velveeta cheese
  • 1/2 tsp tarragon
  • 1 cup white sauce
  • To make white sauce:
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup milk

Preparation

Step 1

Melt butter then add flour. Cook for 1 minute before adding water and bringing to a boil. Stir and heat through till smooth.
In a large bowl mix Part A. Press mixture into a 9 inch pie plate that has been sprayed with cooking spray.
Cook at 350 for 30 minutes.

Prepare white sauce by first melting butter in a small saucepan. Add the flour and mix well. Slowly add the milk, bring to a slight boil, then reduce heat and stir till thickened. Set aside.

Brown mushrooms and green peppers in margarine. Lower temperature then add the remaining ingredients from Part B. Stir until cheese is fully melted. Serve over prepared rice bed.
