- 1 1/4 cup Tre Stelle Ricotta smooth
- 1/4 cup flour
- 1/2 cup parmesan
- 2 eggs
- salt and pepper to taste
- 2 cups bread crumbs

Step 1
Mash the ricotta (better if passed through a sieve). In a medium bowl, combine the ricotta, flour, parmesan, salt, pepper, and eggs. Using a tablespoon, spoon the mixture to form balls. Roll each ball in bread crumbs until well coated. Heat olive oil in large frying pan. When hot cook balls in oil turning frequently until golden. Drain on paper towel and serve.
