Game Day Potatoes

It gets boring eating the same football food every Sunday. I think this dish was a big hit, especially with me because of my overwhelming desire to eat potatoes 24/7.

Ingredients
- About 20 small potatoes
- Olive Oil
- About 1 cup of really good sharp cheddar cheese
- 6 pieces bacon, cooked and crumbled
- 1/2 cup sour cream
- 2 to 3 tbs. chopped chives

Step 1
Preheat oven 425*
Wash potatoes and then dry, put on cookie sheet lined with parchment paper or foil, and drizzle with oil. Roll them around and make sure they are coated completely. Bake for 20 minutes. Then, let cool for at least 30 minutes. Keep the pan lined with parchment or foil.
Slice in half and scoop out flesh leaving the skins. Raise oven to 450*. Turn potatoes with hollowed side down on pan. Bake at 450 for 10 minutes then flip over again and bake another 8 minutes.
Fill skins with cheddar cheese and top with bacon. Stick back in oven for about 2 to 3 minutes.
Top with sour cream and chives...Serve with ice cold beer.
