Ingredients
- Red potatoes, sliced thin in half moon shape
- olive oil
- butter
- salt and pepper
- 1 tsp fresh thyme chopped
- 1 tsp red pepper flakes
- ham diced small
- 1/2 red onion, chopped
- 2 cup fresh spinach, chopped or frozen, thawed and drained
- fresh basil
- 3 to 4 roma tomatoes, seeded and diced
- parmesan cheese
- fried eggs

Preparation
Step 1
Heat oil in skillet,layer bottom with potatoes to brown. Add salt pepper, thyme, pepper flakes. Do not mess with this, let brown and flip once.
Add ham and red onion to above, brown. Add spinach basil, tomatoes and parmesan cheese to heat thru.
Fry eggs in butter.
To serve mound hash on plate with eggs on top
