Ingredients
- Sauce:
- 1 dried anso chile
- 1 dried anaheim chile
- 2 dried chipotle chiles
- 1 TBS cumin seeds
- 1 TBS corriander seeds
- 1 TBS Mexican oregano
- 6 to 8 roma tomatoes
- 1 onion cut into chunks
- 3 garlic cloves
- 1/2 bunch cilantro
- olive oil
- salt and pepper
- 1 lime, juiced
- Beans:
- 2 links churizo, chopped
- 1 onion chopped
- 1 clove garlic, chopped
- olive oil
- 2 cans kidney beans, not drained
- chicken stock
- salt and pepper
- corn tortillas
- canola oil
- fried eggs
- grated cheddar cheese

Preparation
Step 1
In skillet toast chiles, seeds oragano until start to smoke. add chicken stock allow to simmer 15 min.
Put tomatoes onions garlic and cilantro on baking sheet. Drizzle with olive oil, salt and pepper.
Roast in oven 400 degrees for 10 minutes.
Add chiles to blender (being careful) Blend on low then increase speed. Add roasted tomato mixture. Blend well. Transfer to saucepan over low heat to keep warm. Add salt pepper, a little water, olive oil and juice from lime.
In skillet brown churizo, onions and garlic to brown, reserve some for garnish. Add beans, chicken stock, salt and pepper. Simmer till beans are tender. Mash beans, keep warm.
Fry corn tortillas in hot oil then into hot chile mixture, fry eggs in butter. To serve p;ace tortilla on plate, top with beans then fried eggs. top with salsa and garnish with reserved meat, cbeese, cilantro and lime juice
