Ingredients

  • sliced russet potatoes
  • 1 TBS olive oil
  • 1 cup milk
  • 4 eggs
  • salt and pepper
  • 1/2 cup mozzarella cheese
  • 1/2 cup chopped onions
  • 1 TBS olive oil
  • 2 tsp garlic
  • 10 oz frozen chopped spinach, thawed and squeezed dry

Preparation

Step 1

Toss sliced potatoes with 1 TBS olive oil.

Preheat baking pan in 400 degree oven, spray with pam then spread potatoes evenly on bottom of preheated baking pan. Bake at 400 degrees for 8 minutes.

Whisk milk eggs salt pepper and mozzarella cheese together.

In skillet saute onion garlic and olive oil until tender. Add spinach to onion mixture then add to egg mixture.

Pour on top of potato crust. Bake in 350 degree oven for 35 minutes
