Ingredients

  • Butter Sauce:
  • 1 Tbsp. plain gelatin
  • 4 Tbsp. cold water
  • 2/3 c. sugar
  • 3 egg whites, unbeaten
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 16 graham crackers, rolled into crumbs
  • 2 egg yolks, beaten
  • 1/3 c. sugar
  • 1/3 c. melted butter
  • 1 tsp. grated lemon rind
  • 2 Tbsp. lemon juice
  • 1/3 c. heavy cream, whipped

Preparation

Step 1

Sprinkle gelatin over cold water. Add boiling water. Add sugar and stir. Let cool slightly. Add egg whites, salt and vanilla. Add egg whites. Beat until light and creamy. Turn into 9" pie pan and cut pudding into squares and roll in cracker crumbs. Top with Butter Sauce:

Beat yolks until lemon-colored. Add sugar, lemon rind and butter. Fold in cream and chill.
