Ingredients

  • Butter
  • 3/4 c. brown sugar
  • Slices of pineapple or peaches
  • 1 c. flour, sifted
  • 1/4 tsp. salt
  • 1 tsp. baking powder
  • 3 egg yolks, beaten
  • 3 egg whites beaten stiff
  • 1 c. sugar
  • 5 Tbsp. pineapple juice (or peach juice)

Preparation

Step 1

Butter bottom and sides of a 9" pan. Put in bottom of pan the brown sugar. Arrange slices of pineapple or peaches on top sugar. Sift flour and measure 1 c, sift again with the salt and baking powder. To the beaten egg yolks add the granulated sugar and the juice chosen. Sift dry ingredients. Fold in the beaten egg whites. Pour over fruit. Bake 45 min. in 325 oven.
