Ingredients
- Relish:
- 1/4 C flour
- 4 (6 oz chicken boneless skinless breasts
- 1/2 tspn salt
- 1/2 tspn pepper
- 4 tspns canola oil
- 2 + garlic cloves, minced
- 12 oz cherry tomatoes, halved or cut up tomatoes
- 1/2 cup kalamata olives cut up
- 2 tbspns water
- S and P
- 1 oz feta crumbled (1/4 cup)
- 1/4 cup fresh mint

Preparation
Step 1
put flour on paper plate
dry chicken breasts, salt and pepper them
heat oil in the large pan
dredge chicken in flour, brown in pan 6-8 mins each side
transfer to a plate and cover with foil
Meanwhile make the relish:
saute the garlic until fragrant, stir in tomatoes, olives, water and cook, stir in chicken, season with s and p, let mingle.
spoon over chicken, sprinkle with feta and mint.
