Ingredients
- 2 Tbs fresh orange juice
- 2 Tbs fresh lime juice
- 2 tsp dijon mustard
- 2 tsp honey
- 1/4 tsp salt
- 1/8 tsp freshly ground black pepper
- 1/2 cup thinly vertically sliced red onion
- 8 cups bagged prewashed baby spinach (about 8 oz.)
- 1 large firm, sweet-tart apple, cored and thinly sliced
- 1/4 cup crumbled blue cheese (about 1 oz.)

Preparation
Step 1
1. Combine juices and spices and stir well with a whisk.
2. Combine onion, cpinach and apple in a large bowl. Drizzle with dressing; toss gently to coat. Sprinkle with cheese.
