Ingredients
- Non-stick spray
- 1 med. green pepper, chopped
- 1 med. onion, chopped
- 1 med. tomato, chopped
- 1/2 c. kernel corn
- 1 can (15 oz.) pinto beans, drained and coursely chopped
- 2 whole eggs and 4 egg white, beaten
- 1/2 c. shredded sharp cheddar cheese
- 1/2 c. salsa
- salt and pepper to taste

Preparation
Step 1
Spray non-stick skillet with non-stick spray. Heat over med. heat; saute' green pepper and onion till tender. Stir in tomato, corn and beans. Add egs and cheese; stir as for scrambled eggs. Season with salt and pepper. Serve with salsa.
