Ingredients
- 1 15 oz. can white corn
- 1 15 oz. can small black beans
- 2 15 oz. cans rotel tomatoes
- 1 small red onion, chopped
- 2 cloves garlic, minced
- 1 T red wine vinegar
- salt and pepper to taste
- fresh cilantro

Preparation
Step 1
Rinse and drain corn and beans. Combine all ingredients. Be generous with cilantro. Can add lemon juice if desired. Refrigerate overnight for best results.
