Ingredients

  • 4-6 chicken thighs
  • 1/2 c. mayonnaise (you might be able to use less mayo and pesto)
  • 8 T pesto
  • 1/4 tsp. freshly ground pepper
  • 1/3 c. pine nuts
  • 1/3 c. golden raisins

Step 1


Heat oven to 400 degrees. Rinse the chicken and pat it dry then place in baking dish lined with foil (I used cooking spray). Whisk together mayo and pesto and spread on chicken. Bake until chicken is cooked through, about 20-25 minutes. Turn on broiler and cook until golden. Top with pine nuts and raisins.
