Baked Peach Butter

Can be frozen and thawed as needed overnight in refrigerator. Makes 2 1/2 to 3 c.

Ingredients
- 12 c. sliced peaches, peeled and pitted
- 4 c. water
- 3 Tbsp. bottled lemon juice
- 1/2 c. honey

Step 1
Place sliced peaches and water in a Dutch oven or large pot and cook over med. heat till peaches are soft (about 20-25 mins.). Stir frequently to prent the peaches from sticking. When fruit is tender, stir in lemon juice and honey. Put mixture in a blender or food processor until smooth. Pur into two shallow 9 x 13" baking or roasting pans. Bake uncovered for one hour at 325, stirring every 15-20 mins. Continue baking until the butter is thick, about 1-1 1/2 hrs. The peach butter will be thick, fine textrued, and a rich reddish-amber color.
