Ingredients

  • 1 1/2 tablespoons peanut oil
  • 9 boneless, skinless chicken thighs, sliced
  • 1 large onion, sliced
  • 1/4 cup Thai yellow curry paste
  • 1 2/3 cup coconut milk
  • 1 1/2 tablespoons fish sauce
  • 2 teaspoons brown sugar
  • 8 oz dried wheat noodles
  • 5 oz green beans, sliced

Preparation

Step 1

Heat: oil in large pan; cook chicken, in batches, until browned all over. Remove from pan; cover to keep warm

Add onion to same pan; cook, stirring, until soft.
Add curry paste; cook, stirring, until fragrant. Return chicken to pan with coconut milk, sauce and sugar; simmer, uncovered, 20 minutes.

Meanwhile: cook noodles in large pan of boiling water, uncovered, until just tender, drain;

Add beans to chicken curry in pan; cook, uncovered, until beans are just tender. Gently stir in noodles until just heated through.
