Preparation
Step 1
In a bowl, sprinkle dry yeast over the warm water. In a pan over med. heat, combine milk, butter, onion and sugar. Heat to warm (not hot). Should be a little warm to touch (about 110 degrees). Blend in yeast mixture. Add salt and egg and mix well. Gradually beat in 1 1/2 c. of the all-purpose flour and all of the whole wheat flour, adding a little more white flour to make a stiff, sticky dough. Stir in 1 c. of the Cheddar cheese and all the Parmesan cheese. Cover and let rise in a warm place till almost doubled (about an hour).
Stir dough down and divide equally among the baking dishes (greased). Cover and let rise again for 20-30 mins. Sprinkle tops with remaining 1/2 c. Cheddar cheese. Bake in 350 oven until richly browned (about 30 mins.). Remove bread from dishes and cool.
