  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 2 tsp anise seed, crushed
  • 1 tsp finely shredded lemon peel
  • 1/4 cup butter
  • 1/2 cup sugar
  • 2 eggs

Preparation

Step 1

1. Coat a large cookie sheet with cooking spray. Set aside.

2. In a medium mixing bowl, stir together the flour, baking powder, anise seed and lemon peel. Set flour mixture aside.

3. In a small mixing bowl, beat butter with an electric mixer on med speed for 30 seconds. Add sugar; beat until combined. Add eggs; beat well. Stir in flour mixture.

4. On waxed paper, shape dough into two 12" long logs. Place logs on prepared cookie sheet; flatten logs slightly.

5. Bake logs in a 375 degree oven for 15-20 min or until lightly browned. Cool completely on wire racks (about 1 hour).

6. Cut each log into 1/2" thick slices. Arrange slices, cut sides down, on the baking sheet.

7. Bake in a 325 degree oven for 8 min. Turn over. Bake 8-10 min more or until crisp and light brown. Transfer to wire racks and cool completely.
