Ingredients

  • 4 large boneless chicken breast halves
  • salt and pepper to taste
  • 4 slices Swiss Cheese
  • 4 thin slices of smoked ham
  • 1/2 cup all-purpose Flour
  • 1 large Egg
  • 2/3 cup seasoned bread crumbs
  • 2 Tlbsp. Vegetable oil

Preparation

Step 1

Using a sharp knife, cut a deep pocket in each breast half, cutting from thinnest into the thickest part without cutting through. Open out flat; season to taste.
Place slice of cheese and ham on one side of each breast, cutting to fit as necessary. Fold remaining half of breast over to enclose filling. Carefully coat each breast with flour; shake off excess. Dip into egg, then coat with bread crumbs. Place on a foil-lined baking sheet. Place covered in refrigerator for at least 30 minutes.
In a large skillet, heat oil. Add chicken. Cook 4-5 minutes on each side or until chicken is golden and cooked through.(Add more oil if necessary.) Serve immediately.
