Ingredients

  • 1/2 pound dried white beans
  • 4 cups water
  • 1 cup chopped onion
  • 1 carrot, thinly sliced
  • 1 rib celery, thinly sliced
  • 1 bay leaf
  • 1/2 teaspoon dried thyme
  • 4 4-ounce sweet Italian sausage links
  • 2 tablespoons olive oil
  • 3 tablespoons tomato paste
  • 2 cloves garlic, minced
  • freshly ground black pepper
  • kosher salt

Preparation

Step 1

Soak beans overnight in ample water to cover.

Drain beans, place in large saucepot with 4 cups water, onion, carrot, celery, bay leaf and thyme. Cover pot and simmer over moderate heat until beans are just tender, about 45 - 60 minutes.

Preheat oven to 350F.

Heat oil in a skillet and brown sausages. Drain on paper towel. Drain beans, reserving 1 1/2 cups of the cooking liquid (add water if necessary). Return beans to saucepot, add tomato paste and garlic and season to taste with salt and pepper. Place half the beans in a 2-quart casserole, arrange sausage over beans and top with remaining beans. Pour reserved cooking liquid over top, cover casserole and bake for 45 minutes.
