Ingredients
- 3 cups dry lentils
- 7 cups water
- 2 tspns salt
- 6-8 cloves garlic, crushed
- 2 cups onion, chopped
- 2 stalks celery chopped
- 2 med carrots, sliced
- herbs-1/2 to 1 tspn basil, thyme, oregano
- pepper
- 2-3 medium tomatoes
- red wine vinegar to drizzle

Preparation
Step 1
place lentils, water, salt in a kettle. bring to a boil, lower the heat to simmer, cook partly covered 20-30 mins.
add the vegetables (except the tomatoes)herbs and black pepper. Partially cover and let simer another 20-30 mins, stirring occassionally.
heat water to boil, drop in the tomatoes for 10 secs, take them out and peel off the skins and squeeze out the seeds. chopt eh remanining pulp and add to the soup. let the soup cook for at least 5 mins more.
serve hot with a drizzle of vinegar on top
