Ingredients

  • 1 pound spaghetti
  • 2 tablespoons extra-virgin olive oil, plus more for drizzling
  • 6 bacon strips cooked & chopped
  • 2 T bacon drippings
  • 1 cup peas
  • 2 T lemon juice
  • 2 large eggs
  • 1/2 cup grated Parmesan, plus more for garnish
  • 2 tablespoons minced fresh parsley
  • 1/4 t salt
  • 1/4 t pepper

Preparation

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to the package instructions while you start the sauce. Drain pasta and save pasta water.

In a pan add bacon and bacon drippings and peas and cook until heated through. Add remaining ingredients and then add pasta and enough pasta water to create sauce.
