Ingredients
- 50 g melted butter
- 1 1/3 cups sugar
- juice of 3 large lemons
- 1 tspn finely grated lemon rind
- 3 large eggs + 1 yolk

Preparation
Step 1
Mix together sugar and butter
beat in everything else(really well) - or shove everything in food processor and blitz!
Pour into 500ml kilner jar - if it looks overfull split between 2
Lid on finger tight
2 cups water in bottom of pot with jar on trivet
9 minutes HP
10 minutes NP
Stir well
Leave for 20 minutes
Fridge for 4 hours
Store in fridge - should last 2 to 3 weeks but probably all gone before !
