Ingredients

  • 1 pork tenderloin sliced and pounded thin
  • 1/2 cup dried breadcrumbs
  • 1/2 cup egg beater
  • salt and pepper
  • 1/4 cup grated parmesan
  • 1 TBSP light butter
  • 1 TBSP extra virgin olive oil

Preparation

Step 1

Cut pork into medallions, and place between 2 sheets of waxed paper; pound to 1/4-inch thickness with a rolling pin.

On a plate, combine bread crumbs, salt and pepper and parmesan. In a separate pan beat egg beater with salt and pepper.

Dip medallions in egg batter and then lightly coat both sides with breadcrumbs.

Heat skillet on stove top, add butter and olive oil. Pan fry medallions until browned on both sides.

Place on prepared baking sheet; lightly coat with cooking spray.

Bake for 8 minutes; flip and bake until cooked through, about 5 to 7 minutes more. (Coat with cooking spray and broil for a minute or two if you like the coating extra crisp.) Serve with lemon wedges. Yields 1/4 of tenderloin per serving
