Ingredients
- 1 1/2 lbs. asparagus, trimmed
- 1 med. red onion, peeled and cut into thin wedges
- 3 Tbsp. olive oil
- 1 lemon, rind chopped fine and juice
- 1 Tbsp. chopped fresh parsley

Step 1
Heat oven to 400. In large bowl, combine asparagus and onion wedges; toss with olive oil.
Spread out vegetable mixture on pan. Season with salt and pepper to taste. Roast 15 min. or until tender, stirring once. Toss with the lemon rind (zest) and parsley.
