  • 32 ounces lasagna noodles
  • 2 quarts spaghetti sauce
  • 3 eggs
  • 2 pounds ricotta cheese
  • 2 box spinach leaves, frozen thawed
  • 2 pounds mozzarella cheese
  • 8 ounces Romano cheese

Preparation

Step 1

1. Heat oven to 350

2. Cook lasagna noodles and drain set aside.

3. Thaw spinach and drain. make sure you squeeze the spinach to get as much liquid out as possible.

4. Take a large lasagna pan and place 1 inch of the sauce on the bottom. cover sauce with a layer of noodles.

5. Mix ricotta cheese, eggs and spinach together in a bowl. Spread a thin layer of cheese and spinach mixture over the noodles, cover mixture with a little sauce and then layer of noodles, ricotta mixture and a little sauce for moisture. Repeat til the pan is filled and all ingredients are used.Last layer should be sauce.

6. Cover the sauce with the mozzarella cheese and romano cheese.

7. Place lasagna on a cookie sheet and bake for 1 hour or until cheese is evenly melted and browned. Remove from oven and let stand for 20 minutes before cutting.
