- 50 g unsalted butter
- 400 g dark chocolate (chopped roughly)
- 170 g light brown Muscovado sugar
- 1/2 tsp vanilla essence
- 2 eggs
- 85 g plain flour
- 1/2 tsp salt
- 1/2 tsp baking powder

Preheat the oven to 160C. Place the butter and half of the chocolate in a bowl to be melted either over the pan of hot water on a de-frost setting in a microwave. Mix well until melted and smooth.
Put the eggs, sugar and vanilla essence in the bowl and whisk it by hand or with an electric handheld whisk until well combined and fluffy. Sift the flour, baking powder and salt into the egg and sugar mixture, start mixing it with a spatula in a folding motion then add melted butter and chocolate and keep mixing it until evenly dispersed. Finally stir in the remaining chocolate. The mix will make about 12 medium sized cookies. Line a baking tray with the greaseproof paper and arrange cookie dough (1 heaped tbs as a measure) making sure they are spaced apart to allow spreading while baking. Bake in the preheated oven for 12 min. They are ready when the tops start to crack and looks glossy. Be careful to not over bake them as you want them still nice soft and chewy inside. Leave the cookies to cool before you handle them.
