  • •1/2 cups (less 1 Tablespoon) Sugar
  • •1 whole Egg
  • •1/3 cups Honey
  • •2 cups Plain Or All Purpose Flour
  • •1/2 teaspoons Salt
  • •1 teaspoon Baking Powder
  • •1 teaspoon Lemon Rind (~ From 1 Lemon)
  • •2 cups Dessicated Or Shredded Coconut

Preparation

Step 1

Preheat oven to 190 C/375 F.
Cream butter and sugar with an electric beater.

Add egg and honey to the butter-sugar mixture, beat in.

Sift dry ingredients and mix in lemon rind.

Add to the butter mixture and blend well.

Roughly shape into balls (mixture should be very dry).

Press into the coconut in a bowl, flattening balls slightly in the process.

Bake for 15-20 minutes.
