Ingredients

  • For the salad
  • 1 container spring mix
  • 2 large granny smith apples, thinly sliced
  • 1 small red onion, thinly sliced
  • 1/2 cup dried cranberries
  • 1/2 cup candied walnuts
  • 1/2 cup gorgonzola cheese
  • For the vinaigrette
  • 1/3 cup red wine vinegar
  • 3/4 tsp dried oregano
  • 1/2 tsp dry mustard
  • 1 tsp salt
  • 1 pinch black pepper
  • 1/8 cup red onions, chopped fine
  • 1 1/2 tsp garlic, chopped
  • 3/4 cup vegetable oil

Preparation

Step 1

In a blender container, combine vinegar, oregano, mustard, salt and pepper. Stir in the onion and garlic.
Blend together while slowly adding the oil.
Allow to sit at room temp for at least 30 minutes before serving.
Do NOT make this in advance as flavors will not be at their best.

Toss salad ingredients together and mix with vinaigrette. Serve immediately.
