- 1 c graham cracker crumbs
- 2 t butter
- Filling
- 2 8 oz cream cheese softened
- 1/2 c sugar
- 1/2 t lemon extract if tolerated
- 1 t grated lemon rind if tolerated
- 1/2 t vanilla extract
- 2 eggs separated

Step 1
Preheat oven to 325. Combine crumbs and butter and press onto bottom of a 9 in springform pan. Bake at 325 for 10 min. Lower oven temp to 300.
Combine cream cheese, sugar, extracts, and rind mixing at med speed until well blended. Add egg yolks one at a time, mixing after each addition. Fold in stiffly beaten egg whites; pour over crust. Bake at 300 for 45 min. Serve with fresh blueberries if desired.
