Ingredients

  • Crust:
  • 2 cups sifted flour
  • 1/4 cup sugar
  • 1/2 cup butter or margarine, melted
  • Filling:
  • 3 eggs, slightly beaten
  • 1 cup sugar
  • 1 cup light corn syrup
  • 2 tbsp vanilla
  • 1 1/2 cup chopped pecans
  • 3/4 cup mini chocolate chips

Preparation

Step 1

Preheat oven to 350. Grease a 13x9x2 baking pan. In a large bowl combine crust ingredients. Beat with an electic mixer on medium until mixture resembles cornmeal. Press crust firmly and evenly in pan. Bake 12 minutes or till very light brown. In a medium bowl combine filling ingredients. Mix well. Pour over baked crust. Then bake an additional 25 minutes or until filling is beginning to set. Cut into squares.

Suggestions: Serve hot with chocolate drizzle on your plate topped with a scoop of vanilla ice cream.
