Ingredients

  • 1 lb medium shrimp
  • 1/4 cup canola oil (divided)
  • 1 tbsp lime juice
  • 1 green pepper, cut into strips
  • 1/3 cup onion, chopped
  • 1 , 4 oz can chopped green chilies
  • 1 tsp salt
  • 1 , 16 oz jar taco sauce
  • 2 medium tomatoes, chopped
  • 15 pimento stuffed olives
  • 1 tbsp capers
  • 1/4 tsp cumin
  • 1/2 tsp sugar
  • Cooked rice

Preparation

Step 1

Heat 2 tbsp oil in skillet and add shrimp. Stir constantly until shrimp turns pink. Sprinkle with lime juice and remove from heat. Heat remaining oil in skillet. Add green pepper and onion. Cook until onion is transparent. Add chilies, taco sauce, tomatoes, olives, capers, cumin, salt and sugar. Bring to a boil, then reduce heat and simmer for 10 minutes. Add shrimp to sauce. Cook 2 minutes longer. Serve over rice.
