Preparation

Step 1

Adjust the blade of the Mandoline to desired thickness. Holding the handle toward you, ground the opposite end on a cutting board. Carefully slide the produce down the blade. Keep your palm flat and fingers clear. When produce is to small try a towel or use the guard.

Julienne.

Adjust the blade to 1/8 thick and slice vegetables like above. Stack up the slices to about 1" thick. Square off the edges (optional) and slice vegetables lengthwise into skinny matchsticks.
