Ingredients
- 1 c Half and Half
- 2 eggs
- 1/3 c flour
- 3 whole green chilies (4 oz size)
- 1/2 lb Monterey Jack cheese, grated
- 1/2 lb sharp cheddar cheese, grated
- 1 can (8oz) tomato sauce

Preparation
Step 1
1. Preheat oven to 375 degrees F.
2. Beat half and half with eggs and flour until smooth. Split open chilies, rinse our seeds and drain on paper towers.
3. Mix cheeses together on sheet of waxed paper and reserve 1/2 c for topping.
4. Make alternate layers of cheese, chilies and egg mixture in deep 1 1/2 quart casserole. Pour tomato sauce over top and sprinkle with reserved cheese.
5. Bake one hour, or until done in center. Serve with hot corn bread or tortillas and a green salad.
