Ingredients
- 2.5 lb chuck roast
- 1 tsp sea salt
- 1/2 tsp ground black pepper
- 2 Tbsp EVOO
- 1 lb fingerling potatoes
- 1 lb carrots cut into 1" pieces
- 2 yellow onions, coarsley chopped
- 4 cups beef broth
- 1 28 oz can sliced tomatoes, with juices
- 1 16oz jar sliced pepperoncini, save 1/2 liquid
- 1 tsp Italian seasoning
- 1 Tbsp paprika
- 1/4 tsp ground cayenne
- 6 cloves garlic, peeled
- 1 bay leaf
- chopped parsley

Preparation
Step 1
sprinkle roast with salt and pepper. In a large heavy skillet on medium, heat oil. add roast and cook until browned on both sides (about 6 min)
transfer roast to a 6 qt crock pot. add potatoes, carrots, onions, broth, tomatoes pepperoncini with liquid, seasoning, paprika, cayenne, garlic and bay leaf.
cover and cook on low for 8 to 10 hours or high for 5 hours
