Ingredients
- Sauce:
- 1 Tbsp ghee
- 1/2 cup chopped yellow onion
- 1/2 diced carrot
- 1/2 cup diced celery
- 2 cups sliced white mushrooms (yuk)
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp each paprika and red pepper flakes
- 3/4 tsp sea salt
- 1/4 tsp ground black pepper
- 1 28 oz can diced tomatoes with juice
- 3 Tbsp tomato paste
- 1/4 cup chopped fresh basil
- MEATBALLS
- 1 1/2 lb. lean ground beef
- 1 large egg
- 1/4 cup coconut flour
- 2 cloves garlic, minced
- 1 tsp dried parsley
- 1/2 tsp each dried oregano, sea salt and black pepper

Preparation
Step 1
Prepare sauce in a very large skillet on medium, melt ghee. Add onion and saute until golden, 5 minutes. Add carrots, celery, mushrooms garlic, oregano, paprika, pepper flakes, salt and black pepper, saute 5 minutes. Add diced tomatoes, tomato paste and 1/2 cup water; increase heat to boil for 1 minute. Reduce heat and simmer 20 min, uncovered.
