Ingredients

  • 2 cups low-fat graham cracker crumbs
  • 2 tablespoons butter
  • 16 ounces non-fat cream cheese
  • 1 cup non-fat yogurt (drained)
  • Stevia equivalent to1 cup sugar
  • 1/4 cup cornstarch
  • 1 tablespoon fresh lemon juice
  • 2 egg whites
  • 1 large egg
  • 3 cups fresh blueberries (for topping)

Step 1

Pre-heat oven to 325 degrees. Coat a 6-inch spring-form pan with nonstick
cooking spray. To prepare the crust, combine the graham cracker
crumbs and 2 tablespoons butter. Stir with a fork, just until the mixture
is moistened. Using your hands, press the mixture into the bottom and
halfway up the sides of the pan. Bake the crust at 325 degrees for 10
minutes. Remove from the oven, and set aside to cool. In a mixing bowl,
combine the non-fat cream cheese, non-fat yogurt, and stevia equivalent
to 1 cup sugar. With an electric mixer, blend for 3 minutes at high speed.
Add corn starch and lemon juice, and continue mix at high speed for an
additional minute. Add the egg whites and egg, and mix just until the eggs

are combined. Pour the mixture into the prepared graham cracker crust in
the spring-form pan. Transfer pan to pre-heated oven. Bake at 325 degrees
for 55 minutes or until the middle of the cheesecake is set. Remove from
oven. Use a dull knife to release the edge of the cheesecake from the pan.
Set aside to cool completely. Cover and refrigerate until thoroughly chilled.
To serve, slice the cheesecake in 12 equal portions. Top each portion with ¼ c of fresh blueberries
