Ingredients
- 1 teaspoon coconut oil
- 1 tablespoon all-purpose flour
- 4 ounces unsweetened or bittersweet baking chocolate
- 2 tablespoons unsalted butter
- 1 cup all-purpose flour
- 1/4 cup unsweetened baking cocoa
- 1/4 teaspoon salt
- 2 eggs
- Stevia equivalent to 1/2 cup sugar
- 1/2 cup (packed) light brown sugar
- 3/4 cup unsweetened applesauce
- 1 teaspoon pure vanilla extract

Step 1
Pre-heat oven to 350 degrees. Prepare bottom only of a 9x13-inch baking
dish with 1 teaspoon coconut oil, and dust with 1 tablespoon flour. In a
double-boiler over low heat, melt unsweetened chocolate with 2 tablespoons
butter. In a mixing bowl, stir together the flour, cocoa and salt. In a
separate mixing bowl, use electric mixer to combine eggs, brown sugar,
applesauce and vanilla. Combine contents of the two bowls, using electric
mixer to achieve a smooth but stiff batter. Spoon the batter into the
prepared baking dish. Bake at 350 for about 30 minutes, or until the center
is set. Do not overcook (the edges will begin to scorch). Remove from
oven. Set aside to cool on a metal cooling rack.
