Ingredients
- 1 LB fillet of sole
- 6 TBL butter
- 1/4 C sliced almonds
- 1/3 C flour
- 1/2 tsp salt
- dash pepper
- 1 TBL lemon juice
- 1 TBL finely chopped parsley

Preparation
Step 1
pat fillets dry w/ paper towel
melt 4 TBL butter in sm. skillet
saute almonds until lightly browned
set aside
season flour w/ S & P
dredge fillets in seasoned flour
melt remaining 2 TBL butter in lg. skillet over med-high heat
add fillets & fry abt 2-3 min or until 1st side is golden brown
turn & fry additional minutes necessary to total 10 min per inch of thickness
remove fillets to heated ovenproof platter
place in warm oven
return almonds to heat
add lemon juice & stir till mix. boils
spoon over fillets
sprinkle w/ parsley
