Slow Cooked Curry Chicken

Ingredients
- 6 boneless skinless chicken breast
- halves (6 oz each)
- 1 1/4 tsp salt
- 1 can (14 OZ) light coconut milk
- 1 tsp curry powder
- 1/2 tsp ground turmeric
- 1/2 tsp cayenne pepper, divided
- 3 green onions, sliced, divided
- 2 TBL cornstarch
- 2 TBL cold water
- 1 - 2 TBL lime juice
- 3 C hot cooked rice

Preparation
Step 1
sprinkle chicken w/ salt
in nonstick skillet coated w/ cooking spray, brown chicken on both
sides
place in 5 qt. slow cooker
combine coconut milk, curry, turmeric & cayenne
pour over chicken
sprinkle w/ 1/2 of the onions
cover & cook on low for 3 1/2 - 4 1/2 hrs or until chicken is tender
combine cornstarch & water until smooth
stir into slow cooker
cover & cook on high for 30 min or until sauce is thickened
stir in lime juice
serve chicken & sauce over rice
sprinkle w/ remaining onions
