Sky High Strawberry Pie

Ingredients

• 3 quarts fresh strawberries, divided
• 1 1/2 C sugar
• 6 TBL cornstarch
• 2/3 C water
• 1 deep-dish pastry shell (10")
• baked
• 1 C heavy cream
• 1 1/2 TBL instant vanilla pudding mix

Preparation

Step 1

in lg. bowl, mash enough berries to equal 3 C
in saucepan, combine sugar & cornstarch. Stir in mashed berries & water
mix well
bring to boil over med heat, stirring constantly
cook & stir for 2 min.
remove from heat

pour into lg. bowl
chill for 20 min, stirring occasionally, until mix. is just slightly warm
fold in remaining berries
pile into pie shell
chill 2-3 HRS.

in sm. mixing bowl, whip cream until soft peaks form
sprinkle pudding mix over cream & whip until stiff
pipe around edge of pie or dollop on individual slices
