Make Ahead Mac and Cheese

Ingredients
- 3/4 lb. short pasta
- 2 T butter
- 1/4 c flour
- 4 c whole milk
- 8 oz. shredded Cheddar-Jack cheese (about 2 c)
- 1 T Dijon mustard
- 1/2 t pepper
- 5 slices Muenster cheese

Preparation
Step 1
Cook the pasta. Wipe out pot and melt butter over medium heat. Add flour and cook, stirring occasionally until it thickens, about 6-8 minutes. Ad cheese, mustard and pepper and stir to melt. Stir in pasta. Transfer to 9x13 baking dish and cover with Muenster. Cool completely. Cover tightly with plastic wrap and refrigerate until ready to bake at 400 for 25-35 minutes
